Expert panelist Gemma Hildred will explain how geological factors can influence the ingredients and flavors in different types of coffees, notably from Colombia and Ethiopia, and answer your questions.

Gemma Hildred Owner of Cambrian Coffee, Houston, Texas
Gemma is the owner of Cambrian Coffee in Houston, Texas, a geological-themed specialty coffee shop that features her British-inspired baked goods. Gemma is also still an active geologist in the oil and gas industry, as a senior geologist at Chemostrat Inc, using inorganic geochemical data to correlate subsurface oil and gas wells.
Cambrian Coffee takes its inspiration from the Cambrian era, a period of diversification and an explosion of life, much like the coffee scene is currently undergoing in Houston. Named after the Latin world for Wales, where many of the original fossils were identified, this also holds a close connection for Gemma as it is the country of her childhood.
